Avocado Basil Pesto with Meatballs

Avocado basil pesto meatballsI love avocados!  I will come up with any and every excuse to get them on my plate daily.  I also love making pesto and have been playing around with some different ways to make it using veggies and thought avocado would be awesome.  And yes, it is awesome!  Creamy and delicious you could use this for a cold chicken salad, any pasta dish, or with my simple Italian style meatballs.  Need more reasons to love avocado?  Check out this awesome infographic from mercola.com for health benefits and fun facts about this amazing food after the recipe!

 

Avocado Basil Pesto with Meatballs

Meatballs
  1. 1lb ground beef
  2. 1 tblsp dry basil
  3. 1 tsp dry oregano
  4. 1 tsp fennel seed
  5. Salt to taste
  6. + 2 medium zucchini chopped into quarters
Pesto
  1. 1 whole avocado
  2. 1 bunch basil
  3. 1 medium garlic clove
  4. olive oil
  5. Salt to taste
Instructions
  1. Combine all meatball ingredients except zucchini. Heat oil of your choice in a deep saute pan. Roll meat mixture into small meatballs and place in heated oil. Cook for about 10 minutes, turning as needed. When meatballs are just about finished, add the zucchini chunks. Cover and cook additional 5 minutes or until zucchini is starting to soften.
  2. While the meatballs are cooking, place all pesto ingredients into a blender or food processor. Puree until fully combined adding oil to your desired consistency. Once meatballs and zucchini are finished cooking stir in pesto. Cook 2-3 minutes to heat through then serve.
Notes
  1. **This dish is really nice over spiralized veggies as well. You can either nix the zucchini chunks or keep them in for extra veggies!
