Zucchini Lime Fries

This may sound like an odd combination, but trust me they are addictive!  These fries cook up so quickly you can have a healthy snack ready for family or friends in 10 minutes!  Yes really 10 minutes.  Now I pan fried these in coconut oil, but you can also bake at 400 degrees for 10 minutes.  Either way I’m sure you will love this tasty treat especially paired with my cilantro lime dipping sauce!   Zucchini is an antioxidant powerhouse containing vitamin C and the phytonutrients lutein and zeaxanthin which are amazing carotenoids acting as antioxidants in the body.  It
