Chicken Salad with a twist!

Chicken Salad with a twist!

I love chicken salad, but unfortunately most of the restaurant or store bought versions contain mayo with not so healthy ingredients including soybean oil.  I know soy has been touted as a health food, but in this form it most certainly is no such thing!  Fat is a critical part of the diet, no matter what you’ve been told over the past 50 so odd years.  Choosing the right fats is important for the function of the body as fat affects all cells, tissues, organs, energy, brain power, and our immune system.  Fat soluble vitamins A, D, E, and K

Simple Pesto Chicken w/ Noodles

I love simple fresh dishes like this!  They are a snap to prepare and full of wonderful nutrients filling you up and more importantly nourishing your body.  This dish packs a veggie punch using zucchini, yellow squash, and tomatoes topped off with basil!  This antioxidant rich dish helps reduce damaging inflammation and it’s grain free to keep your blood sugar even keel.  Zucchini is a great source of vitamin C, manganese, potassium, and iron.  It is an easily digestible veggie and powerful antioxidant.  Yellow Squash is also an excellent source of vitamin C as well as lutein, zeaxanthin, and beta-cryptoxanthin.  These are 3

Zucchini Lime Fries

This may sound like an odd combination, but trust me they are addictive!  These fries cook up so quickly you can have a healthy snack ready for family or friends in 10 minutes!  Yes really 10 minutes.  Now I pan fried these in coconut oil, but you can also bake at 400 degrees for 10 minutes.  Either way I’m sure you will love this tasty treat especially paired with my cilantro lime dipping sauce!   Zucchini is an antioxidant powerhouse containing vitamin C and the phytonutrients lutein and zeaxanthin which are amazing carotenoids acting as antioxidants in the body.  It

Warm Pumpkin Porridge

Fall is in the air and my Warm Pumpkin Porridge is a nourishing way to wake up to cooler mornings.  Full of easily digestible fiber, healthy fats from coconut, and belly loving collagen hydrosylate this dish not only will give you pep in the mornings, but it’s easy on the gut! Grains can be extremely difficult to digest and for many people with gut imbalance and inflammation should be avoided unless properly prepared through soaking or sprouting.  All grains are essentially seeds and want to be planted and grow the next generation.  Because this is their goal they have built in

Summer Lovin’ Peaches!

Peaches are now and have always been my favorite fruit.  There is nothing better than biting into a fresh in season juicy peach to take away the summer blues (or to help cool you off in this sweltering inferno we call Houston!)  Even thought this seems more like a fall dish, I love to make it in the summer when the peaches & figs are in season.  So yummy!  And yes I have to admit to having this for breakfast this morning.  How could I resist something so lovely!?  Besides, I do have my protein, fat, and carbohydrate mix as
