I love chicken salad, but unfortunately most of the restaurant or store bought versions contain mayo with not so healthy ingredients including soybean oil. I know soy has been touted as a health food, but in this form it most certainly is no such thing! Fat is a critical part of the diet, no matter what you’ve been told over the past 50 so odd years. Don’t be fooled by the amazing facebook, pinterest, website posts you see out there! Life is truly not that perfect! I love coming up with new recipes and trying things out, but most nights it’s the same ol same ol. I have a few go to recipes that I make most weeks and maybe just change up a bit to make it more interesting. We do not eat restaurant inspired meals on a daily or sometimes even weekly basis. Having said that, I do love an interesting meal from time to time and even though it always feels like it
I love avocados! I will come up with any and every excuse to get them on my plate daily. I also love making pesto and have been playing around with some different ways to make it using veggies and thought avocado would be awesome. And yes, it is awesome! Creamy and delicious you could use this for a cold chicken salad, any pasta dish, or with my simple Italian style meatballs. Need more reasons to love avocado? So I’ve been mostly absent from posting, recipes, cooking classes, and basically all things that make up my daily life for the past 4 months. I have been working only here and there as I can because for me, the world wobbles. What does this mean? I suppose it could have some deep philosophical meaning and maybe one day I’ll find it.
