We do a lot of roasted chicken in our house…a lot.  So it can get a little boring in the chicken department.  Here is a tasty meal to switch up your roast chicken night!  Curry baked chicken and Clove scented butternut squash with apples.  mmmmmm….

Ingredients
  1. 1 Whole chicken, broken down
  2. 2 cloves garlic, peeled & smashed
  3. 1 tblsp coriander
  4. 1/2 tblsp curry powder
  5. salt & pepper
Curry Sauce
  1. 1/2 can full fat coconut milk
  2. 1 tblsp tomato paste
  3. 1/2 cup homemade chicken stock
  4. 1 tsp turmeric
  5. 1 tblsp curry powder
  6. 1/8 tsp cayenne (add more if desired)
Instructions
  1. Preheat oven to 350
  2. Season chicken and place in baking dish
  3. In a separate bowl, combine sauce ingredients and pour into baking dish.
  4. Bake for 35-45 minutes or until juices run through.
  5. Spoon sauce over chicken to serve and garnish with green onions of desired.

Clove Scented Butternut Squash with Apples

Ingredients
  1. 1 medium butternut squash, seeds removed & chopped
  2. 1 large apple, cored & chopped
  3. 1/4 tsp ground cloves
  4. 1 tblsp maple syrup (optional)
  5. salt & pepper to taste
  6. butter or coconut oil to cook
Instructions
  1. Melt fat in a large pan over medium heat.
  2. Add butternut and stir to coat. Saute 5 minutes.
  3. Add apples, cloves, syrup, salt & pepper.
  4. Saute until apple & squash are easily pierced with a fork.
Notes
  1. Add chopped walnuts or pecans for a different texture.
