I love avocados!  I will come up with any and every excuse to get them on my plate daily.  I also love making pesto and have been playing around with some different ways to make it using veggies and thought avocado would be awesome.  And yes, it is awesome!  Creamy and delicious you could use this for a cold chicken salad, any pasta dish, or with my simple Italian style meatballs.  Need more reasons to love avocado?  Check out this awesome infographic from mercola.com for health benefits and fun facts about this amazing food after the recipe!   http://

My World Wobbles

So I’ve been mostly absent from posting, recipes, cooking classes, and basically all things that make up my daily life for the past 4 months.  I have been working only here and there as I can because for me, the world wobbles.  What does this mean?  I suppose it could have some deep philosophical meaning and maybe one day I’ll find it.  For me it is literal…the world wobbles.   We sold our house in October 2015 and moved into a hotel until our new purchase was finalized (unfortunately taking 2 months!).  Little did I know there was a villain

Zucchini Lime Fries

This may sound like an odd combination, but trust me they are addictive!  These fries cook up so quickly you can have a healthy snack ready for family or friends in 10 minutes!  Yes really 10 minutes.  Now I pan fried these in coconut oil, but you can also bake at 400 degrees for 10 minutes.  Either way I’m sure you will love this tasty treat especially paired with my cilantro lime dipping sauce!   Zucchini is an antioxidant powerhouse containing vitamin C and the phytonutrients lutein and zeaxanthin which are amazing carotenoids acting as antioxidants in the body.  It
