Serious Flavor Teriyaki Salmon Bowls

Don’t be fooled by the amazing facebook, pinterest, website posts you see out there!  Life is truly not that perfect!  I love coming up with new recipes and trying things out, but most nights it’s the same ol same ol.  I have a few go to recipes that I make most weeks and maybe just change up a bit to make it more interesting.  We do not eat restaurant inspired meals on a daily or sometimes even weekly basis.  Having said that, I do love an interesting meal from time to time and even though it always feels like it will take longer, it almost never does.  See what our brains do to us!  We miss out on yummy food because it sounds too involved or we just worked all day and have nothing left in the tank.  This dish was born on a day where I felt good, energy was pretty high, and creativity was a little more than usual. I head down to the fish market a few times a month (sometimes I just head down there in my head, but don’t actually make it physically).  This was a month where I did make it down and stocked up on some salmon, snapper, and shrimp.  If I’ve got it, we’ll eat it and I really prefer to have fish twice a week when I’m not being lazy and the 20 minute (yes 20 minute) drive to the market.  I had the other ingredients on hand and voila!  Teriyaki bowls for dinner!  This dish seems involved, but actually comes together quickly and is a one pot meal (YES!).  Salmon is our go to fish which I secretly love due to it’s high omega 3 content even more than it’s buttery goodness.  It’s almost like I feel the inflammation from the stresses of the day subsiding with this amazing fat.  I also include detoxifying cilantro and alkalizing lime to create this super flavorful dish. You can find the Coconut secret teriyaki sauce (I know it’s not homemade, but it’s so good and soy free!) at most grocery stores or at amazon or thrive market.  This dish has so much flavor!  Leftovers did not exist…

Teriyaki Salmon Bowls

  1. *Salmon
  2. 4 4-6oz salmon fillets
  3. 1 lime, zest & juice
  4. 1" ginger, minced
  5. 2 garlic cloves, minced
  6. 1/4 cup Coconut Secret Teriyaki Sauce
  7. Salt
  8. Coconut oil
  9. *Noodles
  10. 1 large sweet potato, peeled & spiraled
  11. 2 medium zucchini, peeled & spiraled
  12. 1/2 lime, juice & zest
  13. *Salsa
  14. 2 nectarines, diced
  15. 2-3 tblsp cilantro, chopped
  16. 2 green onions, chopped
  17. 1/2 lime juice & zest
  1. Combine the teriyaki sauce, ginger, garlic, lime zest & juice in a bowl. Add salmon fillets and coat well. Cover and set aside to marinate about 10-15 minutes. Spiral the sweet potato and zucchini and set aside. Combine the ingredients for the salsa and set aside.
  2. Melt coconut oil in a pan over medium high heat. When it sizzles (flick some water in to check), add the salmon skin side up. Cook for 5-7 minutes to caramelize the marinade. Turn heat to medium, pour any remaining marinade in the pan, and turn the salmon over. Cook until no longer pink in the middle and flakes with a fork. Remove from pan.
  3. If needed, add a little water or broth to deglaze the pan. Add sweet potato noodles, lime juice & zest. Toss in the remaining marinade. Cook 5-7 minutes stirring occasionally. When almost soft, add zucchini noodles and cook an additional 3-5 minutes until just soft.
  4. Place noodles in a bowl top with salmon and salsa to serve.
  1. This recipe is also awesome with chicken or steak. You could marinate these for a few hours or overnight for max flavor.
