I love simple, healthy, tasty ingredients!  And I just love pancakes.  I’m always on the lookout for a new pancake recipe so I’ve worked up this little beauty with a lovely banana coconut cream sauce instead of maple syrup.  No extra sugar added, just sweetened with bananas!  In love…

Simple Almond Flour Pancakes with Banana Coconut Cream Sauce

Ingredients
  1. 4 eggs
  2. 1 cup almond flour
  3. 1 tblsp flaxseed meal
  4. 1 tsp vanilla
  5. 1/2 tsp cinnamon
  6. pinch of salt
For Banana Coconut Cream Sauce
  1. 1/2 can full fat coconut milk
  2. 1 med ripe banana
  3. 1 tsp vanilla
  4. 1/2 tsp cinnamon
  5. 1/2 tsp ground ginger
  6. 1/8 tsp nutmeg
Instructions
  1. Whisk together eggs and vanilla.
  2. Add all remaining ingredients and stir until fully incorporated (batter will be runny)
  3. Heat butter or coconut oil over medium heat.
  4. Spoon 1-2 tblsp of batter into skillet.
  5. Cook 1-2 minutes or until browned and flip. Cook an additional 1-2 minutes then remove.
  6. Continue until all the batter has been cooked.
  7. For Sauce: Blend all ingredients together until smooth. Pour over pancakes to serve.
Notes
  1. Add any other fruit you like! You could also make these blueberry pancakes by adding 1/2 cup fresh or frozen blueberries to the batter.
