Simple Pesto Chicken w/ Noodles

I love simple fresh dishes like this!  They are a snap to prepare and full of wonderful nutrients filling you up and more importantly nourishing your body.  This dish packs a veggie punch using zucchini, yellow squash, and tomatoes topped off with basil!  This antioxidant rich dish helps reduce damaging inflammation and it’s grain free to keep your blood sugar even keel.  Zucchini is a great source of vitamin C, manganese, potassium, and iron.  It is an easily digestible veggie and powerful antioxidant.  Yellow Squash is also an excellent source of vitamin C as well as lutein, zeaxanthin, and beta-cryptoxanthin.  These are 3 powerful anti-oxidant carotenoids.  Hello healthy immune systems!  Tomatoes are a well known source of vitamin C as well as lycopene which is made more available when cooked.  Another antioxidant powerhouse!  Maybe I should rename this to antioxidant pesto!  Basil, as with all herbs, has healing medicinal powers including cellular protection (thanks flavonoids!), antibacterial, anti-inflammatory, and a great source of magnesium.  Fill up on this dish to boost your antioxidants and de-stress your body!  This dish is gluten, dairy, and nut free!

  1. 2lb boneless chicken thighs, trimmed & cubed
  2. 2 zucchini
  3. 2 yellow squash
  4. 4 roma tomatoes
  5. salt to taste
Pesto Sauce
  1. 1 large bunch basil
  2. 1 medium garlic clove
  3. olive oil to thin
  4. pinch salt
  1. Begin by preparing the pesto. Place basil, garlic and salt in a food processor and puree. Slowly add olive oil until just thinning. Scrape sides if needed and continue pureeing until you have a light sauce. Process the zucchini and yellow squash into noodles using veggie spiral equipment. Chop tomatoes into half moons. In a medium sauce pan add avocado oil, coconut oil, or ghee. Once heated through add chicken and lightly salt. In a separate deep saute pan add your choice of oil. Add "noodles" and toss to coat. Cover and simmer stirring occasionally. Once chicken juices run clear, add tomatoes and stir to combine. As the noodles begin to turn transparent, add chicken and tomato mixture and stir to combine. Once noodles are to your desired softness, remove from heat. Strain off any excess water. Pour in pesto and stir to coat. Enjoy!
