Peaches are now andIMAG0148[1] have always been my favorite fruit.  There is nothing better than biting into a fresh in season juicy peach to take away the summer blues (or to help cool you off in this sweltering inferno we call Houston!)  Even thought this seems more like a fall dish, I love to make it in the summer when the peaches & figs are in season.  So yummy!  And yes I have to admit to having this for breakfast this morning.  How could I resist something so lovely!?  Besides, I do have my protein, fat, and carbohydrate mix as well as unrefined sugar.  Who could ask for more?  Me, seconds please!

Summer Peach & Fig Crisp

For Crisp Topping
  1. 1 cup almond flour
  2. 1 cup unsweet shredded coconut
  3. 1/4 cup melted coconut oil or butter
  4. 1 tsp cinnamon
  5. 1 tblsp maple syrup
For Filling
  1. 1-1/2 lb peaches (about 4-5), chopped
  2. 1 pint figs, stems removed & halved
  3. 1/2 tsp cinnamon
  4. 1/4 cup maple syrup
Instructions
  1. In a medium saucepan, combine peaches, figs, cinnamon & syrup. Heat to medium and simmer until peaches are fork tender and sauce has thickened slightly, stirring as needed. While peaches are simmering, combine ingredients for crisp topping in a mixing bowl. Stir until fully incorporated and you have a slightly sticky crumbly mixture. Lightly grease an 8x8 baking dish and pour in peach and fig mixture. Cover with crisp topping and place in the oven. Bake 15-20 minutes or until the top is golden brown and the filling is lightly bubbling. Allow to cool 15-20 minutes (if you can!) and serve.
Notes
  1. No figs? No problem! Just leave them out, no need to increase the peaches. This also is yummy with apples and pears in the fall. Feel free to add nutmeg, allspice, or even cloves to expand the flavors! A little orange zest will also give it a little zing 🙂
