Zucchini Lime Fries

This may sound like an odd combination, but trust me they are addictive!  These fries cook up so quickly you can have a healthy snack ready for family or friends in 10 minutes!  Yes really 10 minutes.  Now I pan fried these in coconut oil, but you can also bake at 400 degrees for 10 minutes.  Either way I’m sure you will love this tasty treat especially paired with my cilantro lime dipping sauce!  

Zucchini is an antioxidant powerhouse containing vitamin C and the phytonutrients lutein and zeaxanthin which are amazing carotenoids acting as antioxidants in the body.  It is also a good source of manganese, a mineral needed to help us metabolize protein and carbohydrates as well as protect our cells from free radicals.  It also activates enzymes to help us utilize some important vitamins including Biotin for healthy nerves, choline for healthy cell membranes, and B2 (thiamin) for energy and development of the myelin sheath for healthy nerves.  Zucchini is great for stress and our central nervous system!  In other words, I recommend these fries after a hard day at work 😉

Ingredients
  1. 2 large zucchini cut into sticks
  2. 2 eggs, beaten
  3. 1 cup coconut flour
  4. 1/4 cup tapioca starch (optional)
  5. zest of 1 lime
  6. 1/2 tsp thyme
  7. pinch of salt
  8. 2 tblsp coconut oil (or any healthy fat of choice)
Instructions
  1. Combine the coconut flour, tapioca starch if using, lime zest, thyme, and salt in a bowl. In a saute pan, add 2 tblsp coconut oil or enough to completely coat the bottom of your pan. Turn heat to medium. Once you begin to see little bubbles form, flick some water in the pan to check for sizzle. Turn heat to medium low (too high heat will burn the coconut flour). Begin coating your zucchini. Cover in egg wash first, then coat completely with dry batter shaking off any excess. Place your fries in the heated oil. Cook about 1-2 minutes per side and flip until all sides have been browned. Remove to paper towel to dry any excess oil. Wait a few minutes to cool then dig in! **For reheating, I recommend throwing in the oven at 375 for 5-10 minutes**
Notes
  1. They sky is the limit for seasoning. Add some Lemon zest and rosemary or sage.
  2. **I have not tried freezing this creation due to the water content in zucchini! If you try this, I recommend going from freezer to oven rather than thawing first**

Ingredients
  1. 1/2 cup full fat coconut milk
  2. 1 cup cilantro, stems removed
  3. 1 avocado
  4. juice & zest of 1 lime
  5. salt to taste
Instructions
  1. Place all ingredients in a food processor or blender. Puree until fully combined. Taste and add more salt or lime if needed.
Notes
  1. This recipe is not only a great dip for fries but also makes an awesome sauce for chicken, beef, fish, tacos, salads, grilled veggies etc. It's basically great on everything!
  2. Will last about 2 weeks in the fridge.
